Your Irish adventure begins as you arrive in Dublin and check in to your 4+ star hotel. While the official tour launches on Sunday morning, we invite you to ease into the spirit a little early with an optional evening Pre-Tour Meet & Greet/Ice-Breaker.

Our morning sets off with a guided walking tour unlike any other—led by one of Ireland’s most celebrated food journalists and a dear friend of The Gourmet Vacation. With wit, warmth, and a foodie’s lens, they’ll unravel Dublin’s history as we stroll past its storied streets, weaving tales of poets, revolutionaries, and visionaries while slipping in the flavors and traditions that still shape the city today.

No Dublin journey would be complete without a toast to its most iconic export—Guinness. We’ll step inside the legendary Guinness Storehouse for a behind-the-scenes VIP experience. From learning the brewing secrets of “the black stuff” to exploring the cultural legacy it holds, this private tour brings us closer to Ireland’s most famous pint. Of course, the highlight awaits at the top—savoring a perfectly poured Guinness while gazing out over sweeping panoramic views of the city below.

Next, we turn back the centuries at Trinity College for the awe-inspiring Book of Kells Experience. Stroll the historic campus grounds, then step into the grandeur of the Long Room Library—its soaring oak shelves and ancient tomes making it one of the most breathtaking literary halls in the world. We rise and check-out of our Dublin lodgings, hearts full of anticipation for the day ahead. Our path soon winds south toward the emerald hills and misty valleys of Wicklow. First stop: Glendalough Distillery, nestled in the ancient “Valley of Two Lakes.” Here, in the shadow of monastic ruins and wild forest, five friends revived the art of craft distilling in 2011, producing whiskey, gin, and poitín infused with local botanicals and mountain spring waters.

We’ll bring a twist to this visit—foraging with Santina Kennedy, one of Ireland’s top food voices, who will guide us in identifying local herbs, berries, and botanicals that can flavor spirits or breads alike. Imagine being led through woodland edges, pocketing fragrant leaves and berries, before entering the stillhouse to see how nature’s gifts meet distillation craft.

From there, we journey onward to Waterford Crystal, the legendary maker of the finest cut glass in Ireland. We’ll see master artisans at work, turning molten crystal into delicate vases, decanters, and ornamental works—each piece reflecting centuries of precision, clarity, and hand-blown brilliance.

Next, we arrive at Harty Oysters for a true oyster deep dive. You’ll walk the shores, feel the brine air, hear the lapping tides, and taste fresh oysters right where they are grown. Learn the relationship between sea and shell: salinity, tides, the species’ life cycle, and how the water’s character influences flavor profile.

By late afternoon, we drive into Cork, and check in to the iconic Metropole Hotel, a Victorian-era landmark in the heart of the city. In the evening, we’ll come together for a collaborative dinner with the Metropole’s chef and regional oyster producers—this is where local growers and shuckers meet our group. Expect multiple oyster varieties, creative pairings, and the lively energy of a city that pulses with food pride.

After dinner, if your spirit and energy remain, the night can unfold in true Irish fashion—music, laughter, and community. Join us (optional) at Sin É, Cork’s beloved pub where traditional sessions resonate nightly, instruments in hand and voices raised. Let the melodies drift through the air as we close our day together under soft Irish lights.

We begin our day with a visit to Rossmore Oyster Farm, a quietly powerful name in Irish aquaculture. Since 1969, this family-run farm, nestled in the placid waterways of Cork Harbour, has gown both native and rock oysters in an ecosystem that has supported oyster cultivation since Neolithic times. You’ll walk their tidal beds and trestles, learn about their sustainable breeding practices (they maintain 22 man-made ponds and 13 km of trestles), and sample oysters fresh from sea to palate.

From sea to city, we move into Cork’s beating gastronomic heart: The English Market. Open since 1788, this covered market remains one of Europe’s great food halls. With over 130 traders, stalls brim with artisan cheese, housemade breads, smoked fish, local meats, spices, and sweets. On this tour, you’ll taste your way through signature Cork flavors, paired with small samplings of Murphy’s & Beamish (the Oyster Stouts), giving you a taste of how stout and brine can play beautifully together.

Next, we turn to Ireland’s storied whiskey tradition with a private tour and tasting at Midleton Distillery—home to some of the world’s finest Irish whiskey brands. (As you stroll the barrels, savor the sweet mash aromas and aging casks, you’ll gain appreciation for the alchemy behind each dram.)

In the afternoon, we journey to Blarney Castle. Beyond the stone ramparts and lush gardens, you’ll find the famous Blarney Stone. Legend says that kissing its underside bestows the “gift of gab”—who among us won’t dare the climb?

Following castle time, the rest of the day is yours to wander and explore Cork at your own pace—get delightfully lost through winding alleys, drop into cafés or hidden shops, and let the city’s rhythm surprise you.

We say goodbye to our cozy stay as we set off on a day rich with scenery, flavors, and stories. The road ahead takes us along the famed Ring of Kerry, a breathtaking route where rugged coastlines, rolling mountains, and postcard-perfect villages create a journey as unforgettable as the destination itself.

A short stop in the lively town of Killarney gives us time to stretch our legs, capture a few photos, and soak in the warmth of this quintessential Irish town before we continue.

Our adventure then winds into the Cromane Region, where the pristine tidal flats reveal one of Ireland’s hidden treasures—oysters. At Rialt na Mara, we roll up our sleeves for a true taste of place: oysters pulled straight from the sea, paired with a rustic picnic on the flats. Here, the briny flavors and sea-kissed air remind us why this region is a mecca for seafood lovers.

The journey continues with a visit to the workshop of Hugo Byrne, a young, gifted knifemaker whose artistry transforms steel into objects of beauty and function. Watching him at work offers a glimpse into Ireland’s evolving craft traditions, where heritage and innovation walk hand in hand.

As evening falls, we arrive in the charming village of Adare. Here, Chef Wade Murphy welcomes us into his award-winning restaurant, 1826 Adare, where a seasonally inspired dinner awaits. To complete the evening, a local storyteller breathes life into the night with tales woven deep into Ireland’s cultural fabric. With time to wander the thatched cottages and streets of Adare, the day closes with a touch of enchantment.

The morning unfolds with a step back into the golden age of travel at the Foynes Flying Boat Museum, once the hub of pioneering transatlantic flights. Here, history takes flight as we explore the stories of daring pilots and glamorous passengers who crossed the ocean long before jet engines ruled the skies. It was in Foynes that the world’s first Irish Coffee was created in 1943 to warm chilly travelers, and we’ll honor that legacy by taking part in a hands-on class to craft our own—creamy, strong, and perfectly Irish.

From there, we glide across the Shannon on the Tarbert Ferry, a short but scenic crossing that bridges the worlds of Kerry and Clare. Soon, the land rises dramatically into one of Ireland’s most awe-inspiring natural wonders: the Cliffs of Moher. Towering more than 700 feet above the Atlantic, these rugged cliffs offer sweeping views across to the Aran Islands, with seabirds wheeling overhead and the endless ocean stretching into the horizon.

Our journey then leads us into the heart of County Clare for a delicious immersion at the Burren Smokehouse. Here, we’ll uncover the secrets of traditional smoking methods and taste the delicate richness of their famed smoked salmon and other specialties. Lunch awaits at a cozy country tavern and microbrewery in Lisdoonvarna, a town with its own curious fame—the centuries-old Matchmaking Festival, where love and laughter are always in the air.

Before the day comes to a close, we pause for a perfect photo stop at the storybook Dunguaire Castle, its medieval silhouette reflected in the waters of Galway Bay. From there, it’s on to lively Galway City, where we’ll check into our hotel and enjoy the evening at leisure. Whether you wander cobbled lanes alive with street music or sip a pint in a snug pub, Galway’s charm invites you to explore at your own pace.

For those drawn to the greens, there’s the option to tee off with a morning round of golf (at an additional cost), while others may choose the simple pleasure of a Blackrock shoreline walk, where salty breezes, seabirds, and wide Atlantic views offer a refreshing start to the day.

By midday, we come together for something truly special: a visit to Kelly’s Oysters, a family-run farm that has been cultivating the legendary Galway Bay oysters for over six generations. Here, tradition meets tide as we learn the craft of oyster farming, stroll the beds, and taste the briny treasures pulled straight from the sea. Our tour culminates in a Shucker’s Lunch at Moran’s of the Weir, a thatched cottage pub dating back over 250 years, where plates of oysters, seafood, and local fare are paired with pints and good cheer.

The day crescendos in celebration at the Irish Oyster Opening Championships in Galway. Amid the lively crowds and spirited competition, we’ll cheer on some of the fastest hands in the world of shucking—and host our very own playful Shuck & Suck team competition, with Shuker Paddy leading the way adding our laughter and camaraderie to the festival atmosphere.

By midmorning, the city comes alive in full pageantry with the Parade of Nations, as flags from every oyster-shucking nation ripple down the streets of Galway. There’s an energy in the air—part pride, part camaraderie—that sweeps you along in the tide of celebration.

In the afternoon, we step into the heart of it all—the World Oyster Shucking Championships. Thanks to our host and guide, none other than Patrick “Shucker Paddy” McMurray—a champion, judge, and last year’s charismatic emcee—we are ushered into a VIP vantage point. Here, pints flow, oysters are endless, and the excitement of competition is paired with good bites and even better company. From the first knife strike to the final announcement of the world’s fastest shucker, you’ll be part of the pulse of the championship itself.

And when the last shell has dropped, we retreat to an exclusive dinner at Kombu, where one of Ireland’s most celebrated culinary voices, Chef JP McMahon, awaits us. Known as a champion of Irish food culture, a Michelin-starred chef at Aniar, and founder of Food on the Edge, JP embodies the future of Irish cuisine. With him at the helm, dinner is not simply a meal—it’s a journey through Ireland’s terroir, its sea, and its story.

Afterwards, we check out and journey to the Micil Distillery, a hidden gem where the art of poitín—the storied Irish spirit—comes alive. Explore the distillery, savor a tasting, and discover how centuries of local craft have shaped this bold, aromatic beverage.

The day unfolds along the breathtaking roads of Connemara, where emerald hills, wild bogs, and sparkling waters create a landscape both timeless and magical. We will pause for a hands-on experience in traditional turf cutting, feeling the earthy connection to Ireland’s natural heritage and the rhythms of rural life.

Next, we navigate the famed Sky Road, a drive celebrated as one of the most stunning coastal routes in the world. Here, sweeping ocean vistas, quaint villages, and the raw beauty of western Ireland invite countless photo stops and quiet moments of awe.

Our journey continues to DK Connemara Oysters, where we step into the world of local aquaculture. Learn the secrets of oyster farming, walk the tidal flats, and taste the pristine flavors that only the Connemara waters can provide.

No visit to the region is complete without a stop at Kylemore Abbey. Wander its serene grounds, marvel at the Gothic architecture, and enjoy a leisurely lunch as the abbey’s storied past and tranquil gardens envelop you in peace.

After the excitement of the previous days, Monday begins at a gentler pace. Enjoy a leisurely morning, soaking in the tranquil surroundings, and take advantage of a late check-out—perfect for a little extra rest or quiet reflection before the day unfolds.

We set out to explore the scenic wonders of Donegal, where the rugged coastline meets charming villages. Here, we pause for a quintessentially Irish treat: a lunch of golden, crispy fish and chips from one of the region’s most beloved chippers. Simple, hearty, and unforgettable.

Next, we make a quick stop at Croknagee Oysters, where some of Ireland’s northernmost oysters are cultivated. Learn about the pristine waters and careful craftsmanship behind these briny gems, destined to star at our evening feast.

Our journey continues with a scenic detour to the dramatic Dunluce Castle, perched high above the Atlantic, where history, legend, and spectacular views collide—a perfect spot for photos and a breath of salty sea air.

Finally, we arrive in the storied village of Bushmills and check in to our charming accommodations. The day concludes with a dinner at one of the area’s finest restaurants, where oysters take center stage once again, paired with locally inspired dishes and the warm hospitality that makes Ireland’s dining experiences so memorable.

Today, we set off for one of Northern Ireland’s most iconic natural wonders: the Giant’s Causeway. As the morning unfolds, our journey takes us along the rugged, windswept coastline, where dramatic cliffs and the Atlantic’s endless expanse hint at the magic to come. Upon arrival, you’ll be greeted by the otherworldly spectacle of 40,000 interlocking basalt columns, formed over 60 million years ago by volcanic activity. According to legend, these stones were built by the giant Fionn mac Cumhaill as a bridge to Scotland—an enchanting story that brings the ancient landscape to life. Whether you wander the unique formations, capture photos of the hexagonal pillars, or simply feel the Atlantic breeze on your face, the Giant’s Causeway promises a truly awe-inspiring experience.

Next, we continue to Bushmills Distillery, one of the oldest licensed distilleries in the world, with a history dating back to 1608. Here, you’ll enjoy a private tour and tasting, discovering the secrets behind their iconic Irish whiskey. From the malting floor to the aging casks, you’ll see how centuries-old traditions meet meticulous craftsmanship, and of course, have the chance to savor the liquid gold yourself.

After a leisurely check-out, we begin the day with a thrilling encounter at the Carrick-a-Rede Rope Bridge, where the Atlantic winds and breathtaking coastal views set the stage for a truly memorable adventure. Spanning 20 meters and suspended high above the sea, this historic bridge once linked salmon fishermen to the tiny island of Carrick-a-Rede. Brave souls may choose to cross, while others can simply enjoy the dramatic cliffs and watch the waves crash below—a perfect photo opportunity.

From there, we follow the Causeway Coastal Route, one of the world’s most spectacular drives. Sweeping cliffs, hidden coves, and quaint fishing villages unfold along the way, offering endless vistas that will leave you in awe of Northern Ireland’s rugged beauty. A stop at the Dark Hedges, famously featured in Game of Thrones, invites you to wander beneath the intertwining beech trees and feel the magic of a cinematic forest come alive.

As the afternoon draws near, we arrive in Belfast, where you’ll check into your hotel and settle in before an evening of indulgence and storytelling. We gather at Whites Tavern and Oyster Room, a local gem where Northern Ireland’s oysters take center stage. Patrick “Shucker Paddy” McMurray will present a curated collection of these briny treasures, while the proprietor, a local historian and storyteller, shares tales of Belfast’s past, the tavern’s heritage, and the rich maritime history behind these iconic oysters. Each bite comes with flavor, tradition, and a story to savor—an intimate culinary experience that beautifully reflects the spirit of Northern Ireland.

Walk in the footsteps of Belfast’s shipbuilders, and experience the triumphs and tragedies that shaped maritime history.

No visit to Belfast is complete without seeing the city through the eyes of a famous Black Cab Tour. Hop in for a journey that navigates the murals, landmarks, and neighborhoods, offering insight into Belfast’s past, its cultural evolution, and its resilient spirit. Each stop tells a story, each turn reveals a layer of history that makes this city unforgettable.

As the evening arrives, we gather for our Final Farewell Dinner. It’s an evening of good food, lively drinks, laughter, and, of course, oysters—a true celebration of the journey we’ve shared, the friendships we’ve forged, and the stories we’ve collected along the way.
